Abstract

A technique to quickly quantify soluble starch is of great importance. Such a method would have a significant impact in industry such as ethanol-corn plant. It may also be immensely valuable in other scientific disciplines such as anthropology. We anticipate that it can be used to identify artifacts that are believed to be potatoes are indeed potatoes. Our progress toward these ends will be discussed.
